The Nexus Project team 'Development of low heavy metal, nutritious processed foods from Arequipa-area staple crops with potential novel health attributes' will share their team's achievements.
Presentation Abstract
Heavy metals in crops and processed foods are a concern and play a potential serious health hazard to the Arequipa region, due to its concentration of mining and presence of some heavy metals in soils. This project examined and studied the level of contamination of heavy metals in local crops (e.g. grains such as quinoa, maize, rice and bean) and in extruded and toasted processed products commercialized in local markets. In addition, this study developed processes to reduce heavy metal contamination in staple crops to safer levels. Finally, it was investigated the effect of certain heavy metals on the human gut microbiota to begin to understand how heavy metals may or may not affect health through effect on the gut microbiome.
