Pop-up from HTM to offer ramen, dumplings -- and educational benefit
The School of Hospitality and Tourism Management will offer a pop-up lunchtime concept, Urban Belly, from Feb. 19 to April 19, providing added food choices and introducing HTM students to another real-life food service experience in their curriculum.
To do this limited run, HTM is collaborating with Chicago's Cornerstone Restaurant Group, owner of Urban Belly, a top-rated restaurant in Chicago. The Urban Belly pop-up will serve its acclaimed ramen and dumplings as a partner with HTM's Boiler Bistro, located in the Atrium of Marriott Hall.
From start to finish, HTM students are designing, implementing and managing the Urban Belly partnership. Three upper-level HTM courses have done projects dealing with culinary production, response measurements and facility layout and design.
Hours at the Boiler Bistro are 11 a.m. to 1:30 p.m. Monday-Friday. It will be closed March 12-16 for spring break. Menus and other details for both the Boiler Bistro and the Urban Belly pop-up are available here.
