Bean and Rice Burrito

Yield: Serves 8
Serving Size: 1 burrito

Ingredients:

  • 2 cups kidney beans
  • 2 cups cooked rice
  • 1/2 cup grated cheese
  • 8 flour tortillas
  • 1/2 cup salsa
  • 1 chopped onion

Directions:

  1. Rinse, soak and cook beans.
  2. Preheat oven to 300ºF. Mix rice, chopped onion and beans. Place 1/2 cup of the mixture into each tortilla.
  3. Fold tortilla and cook for 15 min. Pour salsa over tortillas and add cheese.
