Bean and Rice Burrito
Yield: Serves 8
Serving Size: 1 burrito
Ingredients:
- 2 cups kidney beans
- 2 cups cooked rice
- 1/2 cup grated cheese
- 8 flour tortillas
- 1/2 cup salsa
- 1 chopped onion
Directions:
- Rinse, soak and cook beans.
- Preheat oven to 300ºF. Mix rice, chopped onion and beans. Place 1/2 cup of the mixture into each tortilla.
- Fold tortilla and cook for 15 min. Pour salsa over tortillas and add cheese.
