Global cuisine offered at John Purdue Room
The John Purdue Room, located in Marriott Hall, and the students of Hospitality and Tourism Management students in HTM 291 and 492 Lab classes are pleased to offer a two-course fine dining experience featuring a different destination each week. These offerings, called "Global Cuisine Without a Passport," are available at lunch and dinner.
During their lab courses, HTM 291 students learn applied skills, such as cooking and serving, while HTM 492 senior students focus on creating a themed special menu, budget, market, and run the restaurant. In addition to the regular menu, students work with professional chefs to create a two-course meal that correlates to the week’s theme.
“In addition to managerial tasks, such as developing work schedules and analyzing the financial performance of their assigned meals, this HTM 492 senior capstone project requires them to develop a menu, write the recipes, cost them out and execute the menu. Our chef instructors work together between lunch and dinner and they select a variety of countries and cultures,” says Carl Behnke, associate professor of HTM.

* March 27-31: Colombia
* April 3-7: Italy
* April 10-14: Morocco
* April 17-21: Thailand
* April 24-28: Louisiana
A two-course lunch costs $12-$16 and a two-course dinner around $19-$21 per person. As part of student training, there is also a well-balanced wine list to accompany menu offerings. The John Purdue Room is open Tuesday through Friday. Lunch hours are 11 a.m. to 1 p.m. and dinner hours are 5:30 to 7:30 p.m.
