Nutrition Science to offer cooking demonstrations in October

The Department of Nutrition Science is continuing its Eat Local cooking classes in October with sessions on cabbage and apples.

The department has teamed up with a variety of local farmers and producers who will be featured during cooking classes this fall. All classes will include instruction, hands-on cooking and tasting of all recipes, and a recipe booklet to take home. Participants are encouraged to bring containers in case there are leftovers.

Classes scheduled for October are:

Oct. 6: Cabb-Asian
The cooking demonstration will feature cashew cabbage, Mongolian noodle and veggie stir-fry, egg roll in a bowl, and Thai slaw with peanut dressing.

Oct. 20: Apples
The demonstration will feature cinnamon apple pork chops; cranberry apple pecan rice pilaf; apple, cheese and honey crostini; and homemade applesauce.

Participants must be over 18, and all experience levels are welcome. Classes will be held 5:30-7 p.m. in Lyles-Porter Hall Demo Kitchen, Room 1107. Free parking is available after 5 p.m. in the Harrison Street Parking Garage attached to Lyles-Porter Hall.
