Nutrition science starting cooking demonstrations in September

The Department of Nutrition Science is bringing back its Eat Local cooking classes this semester, starting with sessions on tomatoes and zucchini in September.

The department has teamed up with a variety of local farmers and producers who will be featured during cooking classes this fall. All classes will include instruction, hands-on cooking and tasting of all recipes, and a recipe booklet to take home. Participants are encouraged to bring containers in case there are leftovers.

Classes scheduled for September are:

Thursday (Sept. 8): Tantalizing Tomatoes
Heirloom tomatoes, grown right on the Purdue Student Farm, will be the star of this Eat Local cooking demonstration. Small groups will have the opportunity to make either Heirloom Tomato Caprese Salad, Roasted Heirloom Tomato Soup, or Heirloom Tomato Basil Chicken Parmesan Bolognese. Dietetic students will be on hand to guide and assist as necessary and everyone will have a recipe booklet to take home with them.

Sept. 22: Zesty Zucchini
The Department of Nutrition Science has partnered up with the Purdue Student Farm to supply delicious and nutritious zucchini to incorporate into a wide variety of recipes. This Eat Local cooking demonstration will feature Stir Fry Zucchini Noodles, Cranberry Zucchini Slaw, Balsamic Zucchini & Fresh Corn Flatbread with Pesto Ricotta, and Zucchini Hummus.

Participants must be over 18, and all experience levels are welcome. Classes will be held 5:30-7 p.m. in Lyles-Porter Hall Demo Kitchen, Room 1107. Free parking is available after 5 p.m. in the Harrison Street Parking Garage attached to Lyles-Porter Hall.

Additional classes will be added throughout the semester. A list of classes can be found at www.conf.purdue.edu/eatlocal.

Classes are $20 each and are open to the public. Registration is required at www.conf.purdue.edu/eatlocal. For more information, contact class coordinators Jessica Isaacs (jessica.c.isaacs@gmail.com) and Jessica Shellhorn (jshellho@purdue.edu).
