UNSA Food Science Professor and Co-PI Dr. Grethel Choque arrived at Purdue on September 19 for a month-long work on the project “Development of low heavy-metal nutritious foods” with Purdue Co-PI and Food Science Professor Dr. Bruce Hamaker.
The project analyzes toxic metal content in Arequipa’s local processed foods to develop processes to reduce contamination and provide evidence-based nutritional benefits.
Dr. Choque is being trained in the analysis of heavy metals and microbiota, and she will participate in the final bioaccessibility and microbiota experiment with her Purdue team.
