Sterculia appendiculata


Mozambique (Macossa district). Young, tender leaves cut into small pieces and them boiled in water to make derere – a vegetable relish. Potash is added to give it a salt taste. The mixture is stirred until thick and served with nsima, a grain-based porridge.
