Description: Introduction to the theory, methods, literature, and strategies of magnetic resonance applied to agricultural materials including foods, living organisms, and real processes. Illustrates uses of nuclear magnetic resonance (NMR) and electron spin resonance (ESR) spectroscopies as well as imaging (MRI) to nondestructively measure anatomy, composition, microstructure, and physical state and molecular state of specific components. Teaches spectroscopy and origins of functional properties. Offered in even-numbered years.
