Short Title: Functional Foods
Description: The relationship between foods, diet, and health is explained. A major emphasis will be placed on foods as they enhance defense mechanisms, reduce the risk for degenerative disease, help in the recovery from disease, influence physical and mental conditions, and slow the aging process. Development of functional and medical foods and application of biotechnology to food systems are discussed. Offered in even-numbered years.
