Short Title: Safety Of Food Topics
Description: An introduction to principles of food safety, with emphasis based on discussion of current food safety issues. This course includes a wide variety of topics regarding microbial, chemical, physical, and nutritional components of foods. Each year the course is offered, topics will change somewhat based upon current food safety issues. But the direction of the course will remain the same and include topics that highlight safe food processing and preparation, the dangers of microorganisms in foods, foodborne illness prevention, the use of pesticides and other chemical treatments, the role of government agencies in ensuring a safe food supply, and the effects of diet and health. Offered in odd-numbered years.
