Short Title: Better Process Control
Description: The Better Process Control School was developed to certify supervisors of thermal processing systems, acidification, and container closure evaluation programs for low-acid and acidified foods in closed containers. This course satisfies training requirements for Food and Drug Administration (FDA) and United States Department of Agriculture (USDA) regulations. Each student seeking this certification is required to attend each lecture and pass the examinations for the flowing core areas: food microbiology of canning, food container handling (metal, glass, and plastic), food plant sanitation, records for production protection, principles of thermal processing, process room instrumentation/equipment/operation, retort systems and aseptic processing procedures. During the week of instruction, a series of 15 FDA certification exams will be completed.
