Purdue to sponsor deer preparation workshops

WEST LAFAYETTE, Ind. — The Purdue University Cooperative Extension Service will sponsor venison workshops at 6 p.m. Sept. 12 in Vigo County, Sept. 13 in Hamilton County and Sept. 14 in Wayne County.

"At each event, we will demonstrate different skinning techniques, show how to properly separate the muscle from the bone and teach different ways to get rid of the bad tissue when dressing a deer," said Jonathan Ferris, Purdue Extension's Fayette County director.

Participants also will have an opportunity to learn about various meat preparations. Ferris said the materials will cover topics of proper cooking and freezing methods, along with how long the meat can last.

"The participants of the workshop will get a chance to sample the meat that was prepared that night," he said.

Along with venison preparations, different diseases to look for in deer will be discussed at the workshop, including chronic wasting disease and tuberculosis. There are different ways to identify diseases in the deer meat that could be potentially harmful to humans, Ferris said.

Registration is requested by calling the Purdue Extension Office in Fayette County at (765) 825-8502 before Sept. 8. Admission is $10 per person to cover workshop expenses.
