Purdue Best Bets

JOURNALISTS: Here is a news story idea and a list of Purdue events during the next
two weeks.
Flexibility the key ingredient in this cookbook
Just in time for holiday cooking, "Fast and Flexible: Low Cost Recipes for a Family
or Fifty" provides creative food preparation ideas for those with limited budgets
and supplies. "This cookbook is very flexible not only in the variety of foods that
can be substituted into recipes, but also in the variety of people that can use it," explains
Willie Burgess, Purdue Cooperative Extension Service specialist in foods and nutrition.
Although intended for emergency feeding programs, the recipes could help many, including low-income families, busy parents and college students. In the case of the
recipe for Ham and Potato Chowder, suggested substitutions include hash browns for
potatoes and sweet peppers instead of carrots. Each of the 34 recipes contains a
version for 50 people and a family-size version. The cookbook costs $5 and may be ordered
at the Extension offices in all Indiana counties. CONTACT: Burgess, (765) 494-8186;
