Food demonstration to offer advice for those on diabetic diet

Employees who have diabetes or have a family member with diabetes can learn ways to enhance their diets with fiber at a Center for Healthy Living food demonstration.

The demonstration, titled "Increasing Fiber in the Diabetic Diet," will be noon-12:50 p.m. April 23 at the Córdova Recreational Sports Center's Demonstration Kitchen. The event can accommodate 25 participants.

"One of our RN health coaches will begin the demonstration with a brief talk about why fiber is so important in the diabetic diet," says Millie Fenneman, practice administrator at the center. "The rest of the time will be devoted to a live food prep demonstration."

Participants will learn tips for preparing healthy, high-fiber meals that can help them get the recommended daily amount of fiber. The demonstration, which will be led by students from Purdue's Department of Nutrition Science, will include an opportunity to taste the prepared foods.

All benefits-eligible faculty and staff are eligible to register. Spouses and same-sex domestic partners covered on a Purdue medical plan may also sign up.
