Research Profile:

Under nearly all circumstances, blueberries and vitamin D are thought of as healthy and beneficial components of the diet, but with the growing prevalence of dietary supplements, the historical challenge of addressing nutrient deficiencies must now be balanced by also understanding the safety of high consumption levels. To address these questions, we are using both cell culture and animal models to probe the safety and underlying mechanisms of action of these dietary components. The aim of this research is to challenge the commonly held assumption of "the more the better" by gaining an understanding of the upper limits of safety of these dietary components.

During my time at Purdue, I have worked on a wide array of projects, from the synthesis of organometallic uranium complexes to analyzing mercury and omega-3s in fish to phenolic profiling of blueberries to the ADME of vitamin D. And while these may seem like disparate areas of research (which they are!), this diversity of interests fully captures who I am and how I ended up on the path I'm on. Coming out of an undergraduate double major in math and chemistry, I sought a practical application of my skills and interests that still required a high level of critical thinking. Food science is the epitome of a basic, applied science that allows me to use the skills I honed in chemistry while also giving me the opportunity to work with something that people interact with everyday: food! Although I never set out to be a food scientist, I am enthralled with the idea that I can speak knowledgably about the science (or lack thereof) behind current food trends and their implications for people. And that has captured not only my interest, but also that of friends, family, and complete strangers who are all curious about what we eat every day.
